Reuben Casserole

Because of my never ending research of a good Reuben sandwich… Here is an alternative I can’t pass!

Ingredients

6 slices rye bread, cubed

1 (16 ounce) can sauerkraut, drained and rinsed

1 pound deli sliced corned beef, cut into strips

3/4 cup Russian-style salad dressing

2 cups shredded Swiss cheese

Directions

Preheat oven to 400 degrees F

Spread bread cubes in the bottom of a 9×13 inch baking dish. Spread sauerkraut evenly over the bread cubes, then layer beef strips over sauerkraut. Pour dressing over all.

Spray aluminum foil with cooking spray and use to cover baking dish, sprayed side down. Bake in the preheated oven for 20 minutes.

Remove cover, sprinkle with cheese and bake uncovered for another 10 minutes, or until cheese is melted and bubbly.

  1. There used to be a little family run restaurant in a nearby village. They had a fabulous Reuben casserole. After they closed, my wife has tried several times to recreate it but has never quite got it. We’ll definitely be trying this. My best (possibly because it was my first) Reuben was in a restaurant in Underground Atlanta 40 years ago when I was in college. Have no idea of the name of the restaurant or if it’s even there anymore. We were on choir tour and had the evening free to explore. Found the place and tried the sandwich and an Amaretto Sour for the first time. All in all a great evening.

    • I truly don’t remember where I had my first or best Reuben but over the last couple of years… I’ve been dying to get my hands on a good Reuben sandwich and its not happening around here…. It’s so sad when you crave something that’s not available.
